Kalbarri Vegan Date Bars

Ingredients

 

20 Medoul dates pitted
3 tablespoons coconut oil   
1 cup of water
2 cups oat flakes   
1  heaped cup sultanas
½ cup mixed seeds                   
 

Method

 

  1. 4 Tablespoons Chia seeds soak in 1 cup of cold water, set aside while you weigh up other ingredients.

  2. Place dates coconut oil and water in medium saucepan and heat gently until dates soften. Cool slightly and blitz.

  3. Add in oats sultanas and seeds to saucepan mix and bind everything together with the soaked chia seeds. Spoon onto a parchment lined baking tray place in preheated oven @ 180 for 25 minutes. Cool slightly and cut into bars.
